Who doesn’t love a good Oatmeal Chocolate Chip Cookie?

This is a fun and beyond tasty twist on your classic Oatmeal Cookie.  I threw in some butterscotch, white, and chocolate chips to add a some extra flavor to these cookies.  Then I wanted a little more texture, so in went the shredded coconut! Seriously though, these are so good and great to make for your self or to take to a picnic one of these wonderful summer days.

A tasty twist on our traditional Oatmeal Cookies.

  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 1/4 cups flour
  • 2 cups oats
  • 3/4 cup chocolate chips
  • 3/4 cup white chocolate chips
  • 3/4 cup butterschotch chips
  • 1 cup shredded coconut
  1. Preheat oven to 350. 

  2. Cream together butter and sugars.

  3. Mix in eggs and vanilla

  4. Add salt, baking powder and baking soda.

  5. Stir in flour and oats.

  6. Fold in the chips and shredded coconut.  

  7. Bake for 10-12 minutes.
